Adventures in Lemon Cheesecake Cookies!

OK, I finally took the lemon cheesecake cookie recipe I was planning to bake for Connor’s teachers out for a spin, and you’re probably gonna laugh because I do things like “baking test runs,” but I do them because…I’m me! 🙂 I just needed/wanted to do a test batch before doing the actual batch to give to the teachers. (I know. And LOL!)

I’m actually glad I did it because I figured out a few things in the process. One, I bought the wrong flour and didn’t realize it until I started measuring out the ingredients.

DOH! I was supposed to buy self-rising cake flour, but I accidentally bought regular cake flour instead. But there’s a fix for that. (Hang tight. More on this in a minute.)

Two, I left the cookies in the oven a little too long…so I don’t think they were cheesecake-y enough. They were slightly overbaked.

Oops.

And three, tasty as they still were, they weren’t lemony enough. With the next batch, I’m going to kick up the amount of grated lemon peel a notch… I’m probably going to double it because I like my lemon cookies to be very lemony.

All in all, they turned out OK! Not a bad first pass. I got down with a few cookies today, and so did Connor. She was a very helpful baking assistant and did a great job of mixing the dough and rolling out the cookies into balls.

She’s so funny. Her hands would get sticky from the dough and she’d be like, “Mama, I need to wash my hands!” And I’d be like, “No, babylove. The best part about baking is getting dirty. Your hands should be sticky and messy.” I really just wanted her to get in there and play. I put a chair right next to me on the counter so we could talk to each other, and I also gave her a plastic bowl and a whisk so she could do some pretend baking alongside me.

I think one reason I like having her bake with me is because when I was growing up my mom was soooo not a baker, but on rare occasions, she’d make banana bread.

I always wanted to get in there and help, but I was only allowed to mash the bananas with a fork. The rest of the time, I’d stand there drooling and watching and wishing I could do more.

My one other job always happened at the end. My mom would remove the whisks from the electric beater, hand them to me, and then I’d lick every last drop of the batter from them.

I know that people don’t really do that anymore because — HELLO, RAW EGGS — but that was my favorite part! And for the record, I never got sick (side note: El Hub says I have a goat tummy because I can pretty much eat anything, knock on wood). Anyway, because I never got to bake much as a kid, I want Connor’s childhood baking experiences with me to be interactive and hopefully fun.

The second (and hopefully final) batch will go down before Friday, which is the official cookie day, and when I do it, I’m going to dial back on the salt because, like I said earlier, I had to improvise because I didn’t buy self-rising cake flour. You can make self-rising cake flour at home, however, and the way you do it is, for every cup of flour, you add one and a half teaspoons of baking powder and half a teaspoon of salt (thank you, Internet). But in this particular cookie recipe, I could really taste the salt, so next time I’m gonna tone it down.

It’s a good recipe, though, and it’s easy. You should try it if you’re in the mood for a light, soft cookie.

    Haha. I’m the same way! It must be a Filipino thing. I also have an iron stomach. My husband and I went to an all inclusive in Mexico. I used tap water to brush my teeth and ate steak tartare. He ate a banana and was sick for a week. I was fine !

    I am the opposite I just do it and I usually change something in the recipe! My friend never changes anything in any recipe ever and always does something first or brings something she knows she can do. It’s hilarious to us because it is the exact definition of the difference in our personalities! Also these look delicious and I want to make them now, so thanks.

      Hi Jade,

      I think if I was more confident in my baking I’d be able to adjust on the fly on the first pass. I always want to get a base line of what the recipe developer thinks is the best version of the dish, LOL! I guess I’m nerdy that way. Are you a good cook/baker? I do OK if I have a recipe to work with.

        I think I am pretty good but definitely too confident sometimes. I like having an idea though something to go off of. If dinner was what I could imagine in my head it’d be quesadillas every night probably!

          Just tried the fluff your eyebrow with gel first then use pencil trick. And I have some natural looking brows on my face, along with two different concealer combinations under my eye, five concealers total and no other makeup. I don’t even look that crazy because this eyebrow trick is thattttt good!! Thank you for that! ?

    Those cookies look yummy Karen!! I’m sure they’re going to be a hit. I love the look on Connor’s face when she was eating the cookie…so cute!! I also noticed that you painted her little nails…so sweet!!

    I love that you’re making baking memories with Connor! Those cookies look really yummy. Doing a trial run is a good idea because you can keep the first batch for yourself. I hope the next set comes out perfect!
